Black Bean Meatloaf (Vegetarian)

2 15-oz cans of black beans, rinsed, drained, and lightly mashed with a potato masher

1/2 cup water

1 cup finely chopped onion

1 Tbsp minced garlic

2 Tbsp Worcestershire sauce

2 Tbsp tomato paste

3/4 cup plain breadcrumbs

1/4 cup grated pecorino romano cheese

1 egg, beaten
-
1 tsp oregano
-
1/2 tsp salt
-
1/4 tsp ground black pepper

1/4 cup tomato sauce
-
1/4 cup ketchup (approximate)

Saute the onions in the water until they're soft, about 10 minutes. Then add the minced garlic, Worcestershire sauce, and tomato paste to the pan, and cook for another minute or two while stirring to mix it all well.

Remove the pan from heat, and let the mixture cool for 5 minutes.

Combine all of the remaining ingredients except the ketchup with the contents of the pan in a large bowl, and mix well. Put in a 5x9 inch bread pan, and shape it into a loaf. Spread the ketchup over the top (make sure the ketchup covers the entire top well, this is key to it turning out well). Bake at 350 degrees for 50 minutes.
