Chicken Tikka Masala

1 1/2 lbs chicken tenders, cut into 3/4 inch chunks

1 sweet onion, finely diced

2 Tbsp vegetable oil

1/2 cup tikka masala paste (mild, medium, or hot, depending on your taste)

1 1/2 cups water

16 oz tomato sauce

1 cup heavy cream

2 tsp sugar

Saute the onion in the vegetable oil until it's translucent and soft, about 10 minutes. Stir in the tikka masala paste and 1/2 cup of water. Cook until the water has evaporated, about 5 minutes.

Add chicken, mix thoroughly with sauce, and sear on all sides until lightly browned (about 10 minutes, stirring every 2 minutes). Add tomato sauce and remaining water (1 cup). Simmer for 15 minutes, until the chicken is cooked through (verify the largest chicken chunk is at least 165 degrees F). Stir in heavy cream and sugar.

Serve over cooked rice.
