Chicken Picata

1 1/2 lbs boneless skinless chicken breasts

3 Tbsp butter, melted

4 tsp minced garlic

1 medium lemon, thinly sliced

3 Tbsp capers (a small jar)

1/2 cup chicken broth
-
1/2 tsp salt
-
1/4 tsp ground black pepper

4 green spring onions, cleaned and finely chopped

Preheat oven to 400 degrees.
​
Put chicken in a baking pan with tall sides. Brush thoroughly with butter. Sprinkle minced garlic over the chicken. Add lemon slices and capers around the chicken. Pour the chicken broth into the pan. Sprinkle salt and pepper over the chicken.

Bake until chicken reaches 165 degrees F in the middle of the thickest part of the chicken. Usually this will be about 35 - 45 minutes. Starting at 30 minutes, check the temperature every 5 minutes.

To serve, spoon capers over the chicken, and sprinkle with the chopped spring green onions.
​
Serves 3-4 people.
