Lentil With Sausage

  • 1 cup brown lentils

  • 3 cups water

  • 4 sausages (fully cooked)

  • 2 carrots, diced

  • 1 sweet onion, diced

  • 2 tsp minced garlic

  • 1 Tbsp parsley

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

Put all of the ingredients except the sausage in a tall stock pot.  Bring to a boil, reduce heat (level 1 on a gas stove), and simmer for 30 minutes with the lid tilted on the pot.

Add the sausages to the pot, on the bottom, and simmer for another 15 minutes.

NOTE: The exact amount of water (3 cups above), and how long to cook the lentils (30 minutes above), depends on the specific lentils you get.  Follow the instructions that come on the package for the correct amount of water and cook time for you.

Serves 2-3 people.
