I started collecting recipes years ago for a couple of reasons.  One, I wanted better variety than I was getting (fast food and frozen dinners quickly become repetitive).  Two, since I've always worked a lot of hours every week I needed dishes that don't take a lot of time to make (they can cook all day if needed, no problem, but the prep and clean up times have to be short).  So whenever I found one, I kept it.

One thing that limited my options is I'm not a chef.  I can't make complicated meals or ad lib it when something goes wrong, but I can follow reasonably straight-forward directions, as I suspect everyone can.  So you'll notice none of the recipes here are complicated.

While I've included many types of dishes, I'll give a special mention to the vegetarian options.  If you or someone you love is vegetarian, you know it can be hard to find meals that are high in protein.  I've recently put emphasis on finding vegetarian meals for this reason.  I don't think anything says "love" more than going out of your way to find tasty, healthy meals for someone with a restricted diet.

The only word of caution I have for you is, if you're cooking for more than just yourself, test it out once or twice before making it for someone else.  No matter how easy a recipe is, it can take a couple of tries to get it right.  But once you do you'll agree these are all easy to make, and the variety of foods and flavors are worth it.
