Lentil Dahl (Vegetarian)

  • 8 oz red lentils

  • 1 tsp minced garlic

  • 1 sweet onion, diced

  • 1 Tbsp dried basil leaves, crushed

  • 1 tsp curry powder

  • 1 tsp coriander powder

  • 2 cups vegetable stock

  • 1 cup heavy cream

Add lentils, curry powder, garlic, onion, basil, coriander, and vegetable stock to a tall pot.  Bring to a boil, let it slow boil for 20 minutes on medium-low (about 2 on a gas stove) with the lid on and tipped slightly to let some steam out.

Add the heavy cream, put the lid back on (tipped again), and continue simmering for 10 minutes.

​

Serves 2-3 people.
