Pot Roast

  • 1 1/2 lbs lean roast beef (eye round)

  • 3 medium yukon gold potatoes, diced

  • 1 cup baby carrots

  • 1 1/2 cups beef broth

  • 1/2 cup balsamic vinegar

  • 1 Tbsp Worcestershire sauce

  • 2 tsp soy sauce

  • 1 Tbsp honey

  • 4 tsp minced garlic

Put the roast, potatoes, and carrots in a slow cooker.  Mix the remaining ingredients together and pour over the roast.  Cook on high for 4 hours, or on low for 8 hours.
