Chicken Lemon Thyme

  • 4 boneless, skinless chicken breasts

  • 5 Tbsp butter, melted

  • 3 Tbsp lemon juice

  • 1 1/2 Tbsp thyme

  • 1 lemon, quartered

  • 1/2 tsp salt

  • 1/4 tsp pepper

Place the chicken breasts in a baking pan with tall sides.  Mix all remaining ingredients except the lemon quarters, and pour over the chicken.  Place the lemon quarters in the pan.  Preheat oven to 375 degrees, and bake until the temperature in the thickest part of the chicken is 165 degrees F.  Usually this will be about 35-45 minutes.  Once the chicken reaches 165 degrees, remove from the oven and cover loosely with tin foil.  Let it sit for 5 minutes, then serve.

Baste the chicken every 10 minutes while baking.

Serves 4 people.
