Lentil Tikka Masala (Vegetarian)

2 Tbsp olive oil

1 cup sweet onion, diced

1/2 tsp salt

1/4 tsp ground black pepper

1 tsp minced garlic
-
4 tsp tikka masala powder (you can get this from Amazon if it isn't in your grocery store)

1 small can tomato paste (3 oz)

1 cup brown lentils (dry)
-
3 cups vegetable broth
-
1 bay leaf
-
1 cup heavy cream
-
1 Tbsp lemon juice

In a stock pot, heat the olive oil over low heat (level 2 on a gas stove). Add the onion, salt, pepper, and garlic. Saute until onions are tender and translucent, about 10 minutes.

Add the tikka masala powder and tomato paste, stir until fragrant, about 2 minutes.
​
Add the lentils and mix thoroughly. Then add the broth and bay leaf, mix thoroughly.
​
Bring to a boil, reduce to simmer, cover, and cook until done (about 20 minutes).

Add the heavy cream and lemon juice and mix thoroughly. Let simmer for 10 minutes, then serve.

NOTE 1:
Check the lentil package for how much broth to add (3 cups specified above), and how long to let it cook (20 minutes specified above). Exact amounts and time depend on the specific lentils you're using, so follow the package directions.

​If you can't find tikka masala powder, and don't want to order it online, you can make it using:

1 1/2 tsp curry powder

1/4 tsp cayenne pepper powder

1/4 tsp cinnamon powder

1/2 tsp cumin powder

1/2 tsp turmeric powder
